Dirty 30's recipe...Cottage Pie

Dirty 30's vegetable pie.

I found this in a magazine in the waiting room while I was waiting for Mom1 while she was in a doctors appointment. Ps) the cardiologist gave her the thumbs up for a strong heart.


Ingredients

1 qt ground beef (approx 1.5 lbs cooked)
1 med onion chopped
1/2 tsp salt
1/2 tsp pepper
1 tsp whatever you wanna throw in
1 can sauerkraut (OPTIONAL)
1/2 cup carrots
1/2 cup peas
1/2 cup bell peppers
1/2 cup whatever you got dehydrated or canned
1 1/2 cups uncooked rice
3 cups mashed potatoes (prepared & set aside)




Preheat oven to 425 or start your solar cooker.

Heat 2 tbsp oil in a large skillet over med heat.
Add onion and cook until tender (transparent)
Add beef and break it down.
Add seasonings.
Stir in sauerkraut. (um we put spinach or greens instead)
Stir in vegetables.
Turn heat to high.
Add 3 cups water and rice, bring to a boil.

Grease 9x12 baking dish

Spoon mixture from skillet into baking dish.

Spread hot mashed potatoes on top. Or scoop it onto the casserole dish and press with a fork. If you have cheese add that too.

We served ours with a side salad but some folks serve their with a side of beans.

Again, even if you have the most basic of preps you can make this dish. Also, it is a good dish to cook in a solar cooker since it won't alert anyone that you are eating since the potatoes cover the scent pretty good. You can make any variation you like with this from spicy to mild, or substitute pasta instead of rice, or even add some condensed soups or gravy mixes to it. This just gives you a kickoff point for making something with your preps.
